Ingredients

  • Chicken breast - 200 grams, diced
  • Shiitake mushrooms - 100 grams, sliced
  • Chicken broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant, about 1 minute.
  2. Add the diced chicken breast to the pot and cook until the chicken is no longer pink, about 5-7 minutes.
  3. Stir in the sliced shiitake mushrooms and cook for another 3-4 minutes until they soften.
  4. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
  5. Add the soy sauce, salt, and black pepper to taste. Stir well.
  6. Remove from heat and garnish with chopped green onions and cilantro before serving.
