- Chicken breast - 200 grams
- Carrots - 150 grams, diced
- Chicken broth - 500 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Fish sauce - 1 tablespoon
- Coconut oil - 1 tablespoon
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
- Lime - 1, for serving
Steps
- In a pot, heat the coconut oil over medium heat.
- Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the diced carrots and continue to sauté for another 3-4 minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to a simmer and add the chicken breast, cooking until the chicken is fully cooked, about 15-20 minutes.
- Remove the chicken, shred it into pieces, and return it to the pot.
- Stir in the fish sauce, salt, and pepper to taste.
- Serve hot, garnished with chopped green onions and lime wedges on the side.
