Ingredients

  • Chicken breast - 200 grams
  • Carrots - 150 grams, diced
  • Chicken broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Fish sauce - 1 tablespoon
  • Coconut oil - 1 tablespoon
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, for serving

Steps

  1. In a pot, heat the coconut oil over medium heat.
  2. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the diced carrots and continue to sauté for another 3-4 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat to a simmer and add the chicken breast, cooking until the chicken is fully cooked, about 15-20 minutes.
  6. Remove the chicken, shred it into pieces, and return it to the pot.
  7. Stir in the fish sauce, salt, and pepper to taste.
  8. Serve hot, garnished with chopped green onions and lime wedges on the side.
