Ingredients
- Carrots - 300 grams, peeled and chopped
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Olive oil - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pot and cook for another 2 minutes until fragrant.
- Stir in the chopped carrots and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes, or until the carrots are tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
- Stir in the coconut milk, lime juice, and season with salt and black pepper to taste. Heat through for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro.
