Ingredients

  • Carrots - 300 grams, peeled and chopped
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot and cook for another 2 minutes until fragrant.
  3. Stir in the chopped carrots and cook for 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 15 minutes, or until the carrots are tender.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender.
  6. Stir in the coconut milk, lime juice, and season with salt and black pepper to taste. Heat through for an additional 5 minutes.
  7. Serve hot, garnished with fresh cilantro.
