- Beef broth - 500 ml
- Rice noodles - 100 grams

- Ginger - 1 tablespoon, grated
- Green onions - 2, chopped
- Cilantro - a handful, chopped
- Lime - 1, cut into wedges
- Chili - 1, sliced (optional)
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Cornstarch - 1 tablespoon
- Water - 1 liter
Steps
- In a mixing bowl, combine minced beef, garlic, ginger, fish sauce, cornstarch, salt, and black pepper. Mix well and let it sit for 10 minutes to marinate.
- While the beef is marinating, bring 1 liter of water to a boil in a pot. Add rice noodles and cook according to package instructions, usually about 5-7 minutes. Drain and set aside.
- In a separate pot, bring the beef broth to a simmer over medium heat. Form small meatballs from the beef mixture and gently add them to the simmering broth.
- Cook the meatballs for about 8-10 minutes until they are fully cooked through.
- Add the cooked rice noodles to the broth and meatballs. Stir in chopped green onions and let it simmer for an additional 2-3 minutes.
- Serve the soup hot, garnished with fresh cilantro, lime wedges, and sliced chili.
