Steps

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine minced lemongrass, garlic, shallots, bird's eye chili, fish sauce, sugar, lime juice, cilantro, cooking oil, salt, and black pepper to create a marinade.
  3. Clean the snails thoroughly under running water to remove any grit and debris.
  4. Add the snails to the marinade, ensuring they are well coated, and let them marinate for 15 minutes.
  5. Thread the marinated snails onto skewers, leaving some space between each snail for even cooking.
