Steps

  1. In a bowl, combine fish sauce, minced garlic, chopped shallots, black pepper, lime juice, coconut sugar, and chili flakes to create the marinade.
  2. Place the pork ribs in a large zip-top bag or a shallow dish and pour the marinade over the ribs. Ensure the ribs are well coated.
  3. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the ribs from the marinade and let excess marinade drip off. Reserve the marinade for basting.
  6. Grill the ribs for about 5-7 minutes on each side, basting with the reserved marinade, until they are cooked through and have nice grill marks.
  7. Remove the ribs from the grill and let them rest for a few minutes before slicing.
