Steps
- In a bowl, combine fish sauce, minced garlic, chopped shallots, black pepper, lime juice, coconut sugar, and chili flakes to create the marinade.
- Place the pork ribs in a large zip-top bag or a shallow dish and pour the marinade over the ribs. Ensure the ribs are well coated.
- Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.
- Preheat your grill to medium-high heat.
- Remove the ribs from the marinade and let excess marinade drip off. Reserve the marinade for basting.
