- Oyster sauce (vegetarian) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 teaspoon
- Green onions - 2 stalks, chopped
- Fresh cilantro - 10 grams, chopped

- Black pepper - to taste
- Vegetable oil - for frying
Steps
- Start by slicing the king oyster mushrooms into scallop-like rounds and the firm tofu into bite-sized cubes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the tofu cubes and fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add more oil if needed, and add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
- Add the sliced king oyster mushrooms and stir-fry for 3-4 minutes until they start to soften.
- Next, add the sliced red bell pepper and zucchini. Stir-fry for another 3-4 minutes until the vegetables are tender yet crisp.
- Return the fried tofu to the skillet and add soy sauce, vegetarian oyster sauce, sesame oil, and rice vinegar. Stir well to combine all ingredients.
- Season with salt and black pepper to taste. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Remove from heat and garnish with chopped green onions and fresh cilantro before serving.
