- Scallions - 4 stalks, finely chopped
- Coconut oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lime juice - 1 tablespoon
- Fish sauce - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a small pan, melt the coconut oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add the chopped scallions to the pan and sauté for another 2-3 minutes until softened. Remove from heat and stir in lime juice, fish sauce, salt, and black pepper.
- Arrange the scallops on a baking tray and spoon the scallion oil mixture generously over each scallop.
