Ingredients

  • King oyster mushrooms - 200 grams
  • Soy sauce - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Coconut milk - 100 ml
  • Fresh coriander, chopped - 2 tablespoons
  • Chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime wedges - for garnish

Steps

  1. Clean the king oyster mushrooms and slice them into 1 cm thick rounds.
  2. In a bowl, mix soy sauce, lemon juice, minced garlic, and minced ginger to create a marinade.
  3. Add the mushroom slices to the marinade and let them soak for 15 minutes.
  4. Heat olive oil in a pan over medium heat, then add the marinated mushrooms and cook for about 5-7 minutes on each side until they are golden brown.
  5. Remove the mushrooms from the pan and set aside. In the same pan, add the coconut milk, chili flakes, salt, and black pepper.
  6. Bring the coconut milk mixture to a gentle simmer, then add the cooked mushrooms back to the pan and cook for an additional 2-3 minutes to combine the flavors.
  7. Remove from heat and stir in the chopped coriander.
  8. Serve the Sò Điệp Chay warm, garnished with lime wedges.
