Ingredients
- Water spinach (Rau Muống) - 200 grams
- Water - 1 liter
- Salt - 1 teaspoon
- Garlic - 1 clove, minced
- Chili (optional) - 1 small, chopped
Steps
- Fill a large pot with 1 liter of water and add 1 teaspoon of salt. Bring to a boil over high heat.
- While the water is heating, rinse the water spinach thoroughly under cold water to remove any dirt or grit.
- Once the water is boiling, add the cleaned water spinach to the pot. Cook for about 2-3 minutes until the leaves are tender and bright green.
- Using a slotted spoon or tongs, carefully remove the water spinach from the pot and place it in a bowl of cold water to stop the cooking process. Let it cool for a minute.
- Drain the water spinach and gently squeeze out any excess water.
- Transfer the water spinach to a serving plate. Top with minced garlic and chopped chili if using.
- Serve immediately, either plain or with a side of soy sauce or fish sauce for dipping.
