Ingredients

  • Water spinach (Rau Muống) - 200 grams
  • Water - 1 liter
  • Salt - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili (optional) - 1 small, chopped

Steps

  1. Fill a large pot with 1 liter of water and add 1 teaspoon of salt. Bring to a boil over high heat.
  2. While the water is heating, rinse the water spinach thoroughly under cold water to remove any dirt or grit.
  3. Once the water is boiling, add the cleaned water spinach to the pot. Cook for about 2-3 minutes until the leaves are tender and bright green.
  4. Using a slotted spoon or tongs, carefully remove the water spinach from the pot and place it in a bowl of cold water to stop the cooking process. Let it cool for a minute.
  5. Drain the water spinach and gently squeeze out any excess water.
  6. Transfer the water spinach to a serving plate. Top with minced garlic and chopped chili if using.
  7. Serve immediately, either plain or with a side of soy sauce or fish sauce for dipping.
