- Coconut milk - 400 ml
- Water - 200 ml
- Agar-agar powder - 10 g
- Sugar - 50 g
- Pandan leaves - 2 (tied in a knot)
- Salt - a pinch
- Coconut meat (shredded) - 50 g
Steps
- In a saucepan, combine the water, agar-agar powder, and sugar. Stir well to dissolve the agar-agar and sugar completely.
- Add the pandan leaves and a pinch of salt to the mixture. Bring to a boil over medium heat, stirring continuously.
- Once boiling, reduce the heat and let it simmer for about 5 minutes. Remove the pandan leaves from the mixture and discard them.
- In a separate bowl, mix the coconut milk with the remaining water. Stir until well combined.
- Gradually pour the coconut milk mixture into the agar-agar mixture while stirring constantly.
- Continue to simmer for an additional 5 minutes, ensuring everything is well combined.
- Pour the mixture into a mold or individual serving cups and add the shredded coconut meat into the mixture.
- Let it cool at room temperature for about 10 minutes, then refrigerate for at least 30 minutes or until set.
- Once set, unmold the jelly and slice it into desired shapes. Serve chilled.
