Ingredients

  • Coconut milk - 400 ml
  • Water - 200 ml
  • Agar-agar powder - 10 g
  • Sugar - 50 g
  • Pandan leaves - 2 (tied in a knot)
  • Salt - a pinch
  • Coconut meat (shredded) - 50 g

Steps

  1. In a saucepan, combine the water, agar-agar powder, and sugar. Stir well to dissolve the agar-agar and sugar completely.
  2. Add the pandan leaves and a pinch of salt to the mixture. Bring to a boil over medium heat, stirring continuously.
  3. Once boiling, reduce the heat and let it simmer for about 5 minutes. Remove the pandan leaves from the mixture and discard them.
  4. In a separate bowl, mix the coconut milk with the remaining water. Stir until well combined.
  5. Gradually pour the coconut milk mixture into the agar-agar mixture while stirring constantly.
  6. Continue to simmer for an additional 5 minutes, ensuring everything is well combined.
  7. Pour the mixture into a mold or individual serving cups and add the shredded coconut meat into the mixture.
  8. Let it cool at room temperature for about 10 minutes, then refrigerate for at least 30 minutes or until set.
  9. Once set, unmold the jelly and slice it into desired shapes. Serve chilled.
