- Coconut sugar - 1 tablespoon
- Salt - 1 teaspoon
- Water - 120 ml
- Fresh cilantro - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine rice vinegar, coconut sugar, salt, and water. Stir until the sugar and salt are fully dissolved.
- Add the julienned carrot, daikon radish, and cucumber to the vinegar mixture. Toss to coat the vegetables evenly.
- Let the mixture sit for at least 20 minutes to allow the vegetables to pickle and absorb the flavors.
- After pickling, drain the excess liquid and transfer the vegetables to a serving bowl.
- Sprinkle with minced garlic, grated ginger, and chopped cilantro. Toss gently to combine.
- Serve immediately as a refreshing side dish or chill in the refrigerator for up to 1 day before serving.
