  • Fresh ginger - 1 teaspoon, grated
  • Rice vinegar - 60 ml
  • Coconut sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Water - 120 ml
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine rice vinegar, coconut sugar, salt, and water. Stir until the sugar and salt are fully dissolved.
  2. Add the julienned carrot, daikon radish, and cucumber to the vinegar mixture. Toss to coat the vegetables evenly.
  3. Let the mixture sit for at least 20 minutes to allow the vegetables to pickle and absorb the flavors.
  4. After pickling, drain the excess liquid and transfer the vegetables to a serving bowl.
  5. Sprinkle with minced garlic, grated ginger, and chopped cilantro. Toss gently to combine.
  6. Serve immediately as a refreshing side dish or chill in the refrigerator for up to 1 day before serving.
