- Firm tofu - 200 grams
- Rice flour - 50 grams
- Cornstarch - 30 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Carrot - 1 small, grated
- Cherry tomatoes - 100 grams, halved
- Fresh basil - 20 grams, chopped
- Soy sauce - 1 tablespoon
- Chili flakes - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Sesame seeds - 1 tablespoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Drain and press the firm tofu to remove excess moisture, then crumble it into a bowl.
- Add rice flour, cornstarch, salt, and pepper to the crumbled tofu and mix until well combined.
- Spread the tofu mixture onto a parchment-lined baking sheet to form a pizza base, about 1 cm thick.
- Bake the tofu base in the preheated oven for 15 minutes until golden and firm.
- While the base is baking, heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
- Add red bell pepper, zucchini, and grated carrot to the skillet, cooking for about 5 minutes until softened.
- Stir in cherry tomatoes, soy sauce, chili flakes, and fresh basil, cooking for another 2-3 minutes.
- Remove the tofu base from the oven and top it with the sautéed vegetable mixture evenly.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Once done, sprinkle sesame seeds on top if desired, slice, and serve hot.
