Ingredients

  • Firm tofu - 200 grams
  • Rice flour - 50 grams
  • Cornstarch - 30 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Carrot - 1 small, grated
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - 20 grams, chopped
  • Soy sauce - 1 tablespoon
  • Chili flakes - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Drain and press the firm tofu to remove excess moisture, then crumble it into a bowl.
  3. Add rice flour, cornstarch, salt, and pepper to the crumbled tofu and mix until well combined.
  4. Spread the tofu mixture onto a parchment-lined baking sheet to form a pizza base, about 1 cm thick.
  5. Bake the tofu base in the preheated oven for 15 minutes until golden and firm.
  6. While the base is baking, heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
  7. Add red bell pepper, zucchini, and grated carrot to the skillet, cooking for about 5 minutes until softened.
  8. Stir in cherry tomatoes, soy sauce, chili flakes, and fresh basil, cooking for another 2-3 minutes.
  9. Remove the tofu base from the oven and top it with the sautéed vegetable mixture evenly.
  10. Return the pizza to the oven and bake for an additional 10 minutes.
  11. Once done, sprinkle sesame seeds on top if desired, slice, and serve hot.
