  • Red onion (sliced) - 30 grams
  • Fresh cilantro (chopped) - 20 grams
  • Chili sauce - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Sesame seeds - 1 tablespoon

Steps

  1. In a mixing bowl, combine rice flour, water, and salt to create a smooth batter.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
  3. Pour half of the batter into the skillet, spreading it evenly to form a round base. Cook for 5-7 minutes until the bottom is golden brown.
  4. Flip the base and pour half of the coconut milk on top, then add sliced bell pepper, mushrooms, and red onion evenly over the surface.
  5. Drizzle with soy sauce and chili sauce, then cover the skillet with a lid and cook for an additional 5-7 minutes until the vegetables are tender.
  6. Remove from heat and garnish with chopped cilantro and sesame seeds.
  7. Repeat the process with the remaining batter and toppings to make a second pizza.
  8. Serve hot with a squeeze of lime juice on top.
