Ingredients
- Rice flour - 150 grams
- Warm water - 200 milliliters
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Zucchini - 100 grams, thinly sliced
- Bell pepper - 100 grams, thinly sliced
- Carrot - 50 grams, julienned
- Mushrooms - 100 grams, sliced
- Fresh basil - 10 grams, chopped
- Fresh cilantro - 10 grams, chopped
- Chili flakes - 1 teaspoon (optional)
- Soy sauce - 1 tablespoon
- Mozzarella cheese - 100 grams, shredded
Steps
- Preheat the oven to 220°C (428°F).
- In a mixing bowl, combine rice flour, warm water, salt, and olive oil. Mix until a smooth dough forms.
- Let the dough rest for 10 minutes, then roll it out to a thin circle on a parchment paper-lined baking tray.
- Bake the crust in the preheated oven for 10 minutes or until it starts to turn golden.
- In a skillet, sauté zucchini, bell pepper, carrot, and mushrooms over medium heat for 5 minutes until slightly softened. Add soy sauce and mix well.
- Remove the crust from the oven, spread the sautéed vegetables evenly on top, and sprinkle with mozzarella cheese.
- Add fresh basil, cilantro, and chili flakes on top, then return to the oven.
- Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Once cooked, remove from the oven, let cool slightly, slice, and serve.
