Ingredients

  • Rice flour - 150 grams
  • Warm water - 200 milliliters
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Zucchini - 100 grams, thinly sliced
  • Bell pepper - 100 grams, thinly sliced
  • Carrot - 50 grams, julienned
  • Mushrooms - 100 grams, sliced
  • Fresh basil - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Chili flakes - 1 teaspoon (optional)
  • Soy sauce - 1 tablespoon
  • Mozzarella cheese - 100 grams, shredded

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine rice flour, warm water, salt, and olive oil. Mix until a smooth dough forms.
  3. Let the dough rest for 10 minutes, then roll it out to a thin circle on a parchment paper-lined baking tray.
  4. Bake the crust in the preheated oven for 10 minutes or until it starts to turn golden.
  5. In a skillet, sauté zucchini, bell pepper, carrot, and mushrooms over medium heat for 5 minutes until slightly softened. Add soy sauce and mix well.
  6. Remove the crust from the oven, spread the sautéed vegetables evenly on top, and sprinkle with mozzarella cheese.
  7. Add fresh basil, cilantro, and chili flakes on top, then return to the oven.
  8. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  9. Once cooked, remove from the oven, let cool slightly, slice, and serve.
