  • Zucchini - 1 medium, sliced
  • Fresh basil - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Chili flakes - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Lime - 1, juiced

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  4. In a bowl, mix the coconut milk with the lime juice, salt, and black pepper to create a creamy sauce.
  5. Spread the coconut milk mixture over the tomato sauce layer.
  6. In a skillet, heat the olive oil over medium heat and sauté the shiitake mushrooms, red bell pepper, carrot, and zucchini for about 5 minutes until they are slightly tender.
  7. Add the chili flakes and cook for an additional 2 minutes. Remove from heat.
  8. Distribute the sautéed vegetables evenly over the pizza.
  9. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  10. Remove the pizza from the oven and sprinkle with fresh basil and cilantro before slicing and serving.
