  • Green bell pepper (sliced) - 1/2
  • Onion (sliced) - 1 small
  • Fresh cilantro (chopped) - 2 tbsp
  • Lime wedges - for serving
  • Sliced chili (optional) - for garnish

Steps

  1. In a mixing bowl, combine rice flour, warm water, and salt to make a smooth batter. Let it rest for 10 minutes.
  2. In a skillet, heat vegetable oil over medium heat. Add cubed chicken and cook until browned, about 5-7 minutes.
  3. Stir in yellow curry powder and coconut milk, and simmer for an additional 5 minutes until the chicken is cooked through and the sauce thickens.
  4. In a separate non-stick frying pan, pour in the rice flour batter to form a thin crust. Cook on medium heat for about 5 minutes until the bottom is golden and crispy.
  5. Flip the crust and quickly layer on the curry chicken, sliced bell peppers, and onion. Cover and cook for another 5-7 minutes until the vegetables are slightly tender.
  6. Garnish with fresh cilantro and serve with lime wedges and sliced chili on the side.
