Steps
- In a mixing bowl, combine rice flour, warm water, and salt to make a smooth batter. Let it rest for 10 minutes.
- In a skillet, heat vegetable oil over medium heat. Add cubed chicken and cook until browned, about 5-7 minutes.
- Stir in yellow curry powder and coconut milk, and simmer for an additional 5 minutes until the chicken is cooked through and the sauce thickens.
- In a separate non-stick frying pan, pour in the rice flour batter to form a thin crust. Cook on medium heat for about 5 minutes until the bottom is golden and crispy.
- Flip the crust and quickly layer on the curry chicken, sliced bell peppers, and onion. Cover and cook for another 5-7 minutes until the vegetables are slightly tender.
- Garnish with fresh cilantro and serve with lime wedges and sliced chili on the side.
