Ingredients

  • Rice flour - 100 grams
  • Tapioca flour - 50 grams
  • Warm water - 180 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Shiitake mushrooms - 50 grams, sliced
  • Red bell pepper - 1/2, diced
  • Green onions - 2, chopped
  • Carrot - 1 small, grated
  • Mozzarella cheese - 100 grams, shredded
  • Fresh basil - 10 grams, chopped
  • Soy sauce - 1 tablespoon
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine rice flour, tapioca flour, salt, and warm water to form a batter. Let it rest for 10 minutes.
  2. Heat 1/2 tablespoon of olive oil in a non-stick pan over medium heat. Pour in half of the batter to form a thin layer, cooking for about 3-4 minutes until the edges turn golden and crisp.
  3. Flip the crust and cook for an additional 2-3 minutes. Remove from the pan and repeat with the remaining batter to create a second crust.
  4. In the same pan, add the remaining olive oil, shiitake mushrooms, red bell pepper, and carrot. Sauté for 5-7 minutes until tender.
  5. Add black pepper and soy sauce to the sautéed vegetables, mixing well.
  6. Place one crust in the pan, layer with sautéed vegetables, sprinkle mozzarella cheese, and top with fresh basil.
  7. Cover the pan and cook on low heat for about 5 minutes until the cheese is melted.
  8. Transfer the pizza to a plate, slice, and serve warm with the second crust topped similarly.
