Ingredients

  • Rice flour - 100 grams
  • Water - 300 ml
  • Turmeric powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Button mushrooms - 100 grams, sliced
  • Bell pepper - 1 medium, thinly sliced
  • Red onion - 1 small, thinly sliced
  • Fresh bean sprouts - 100 grams
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Soy sauce - 2 tablespoons
  • Lime - 1, cut into wedges
  • Chili sauce - for serving (optional)

Steps

  1. In a mixing bowl, combine the rice flour, turmeric powder, salt, and water. Whisk until smooth and let it rest for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, swirling to coat the bottom evenly.
  3. Cook for about 3-4 minutes until the edges are crispy and the top is set. Add half of the mushrooms, bell pepper, red onion, and bean sprouts on one side of the pancake.
  4. Fold the pancake over the filling and cook for another 2 minutes. Transfer to a plate and keep warm.
  5. Repeat the process with the remaining batter and vegetables to make the second pancake.
  6. Serve hot, garnished with fresh cilantro and mint. Drizzle with soy sauce and serve with lime wedges and chili sauce on the side.
