- Rice flour - 100 grams
- Water - 300 ml
- Turmeric powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Button mushrooms - 100 grams, sliced
- Bell pepper - 1 medium, thinly sliced
- Red onion - 1 small, thinly sliced
- Fresh bean sprouts - 100 grams
- Fresh cilantro - 1/4 cup, chopped
- Fresh mint - 1/4 cup, chopped
- Soy sauce - 2 tablespoons
- Lime - 1, cut into wedges
- Chili sauce - for serving (optional)
Steps
- In a mixing bowl, combine the rice flour, turmeric powder, salt, and water. Whisk until smooth and let it rest for 15 minutes.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, swirling to coat the bottom evenly.
- Cook for about 3-4 minutes until the edges are crispy and the top is set. Add half of the mushrooms, bell pepper, red onion, and bean sprouts on one side of the pancake.
- Fold the pancake over the filling and cook for another 2 minutes. Transfer to a plate and keep warm.
- Repeat the process with the remaining batter and vegetables to make the second pancake.
- Serve hot, garnished with fresh cilantro and mint. Drizzle with soy sauce and serve with lime wedges and chili sauce on the side.
