Ingredients

  • Bánh tráng (rice paper) - 2 sheets
  • Coconut oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Cherry tomatoes, halved - 100 grams
  • Red bell pepper, thinly sliced - 50 grams
  • Mushrooms, sliced - 50 grams
  • Fresh basil leaves - 20 grams
  • Fresh cilantro leaves - 20 grams
  • Chili flakes - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Peanut butter - 1 tablespoon
  • Sesame oil - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the soy sauce, lime juice, and peanut butter together to create a sauce.
  3. Heat 1 tablespoon of coconut oil in a pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Add the cherry tomatoes, red bell pepper, and mushrooms to the pan. Stir-fry for 4-5 minutes until just tender. Remove from heat.
  5. Place one sheet of bánh tráng on a baking tray lined with parchment paper. Brush with remaining coconut oil.
  6. Spread half of the sautéed vegetable mixture evenly on top of the bánh tráng.
  7. Drizzle half of the sauce over the vegetables and sprinkle with fresh basil, cilantro, and chili flakes.
  8. Repeat the same process with the second sheet of bánh tráng and remaining ingredients.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are crispy.
  10. Remove from the oven, slice, and serve hot.
