Ingredients
- Bánh tráng (rice paper) - 2 sheets
- Coconut oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Cherry tomatoes, halved - 100 grams
- Red bell pepper, thinly sliced - 50 grams
- Mushrooms, sliced - 50 grams
- Fresh basil leaves - 20 grams
- Fresh cilantro leaves - 20 grams
- Chili flakes - 1 teaspoon
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Peanut butter - 1 tablespoon
- Sesame oil - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a small bowl, mix the soy sauce, lime juice, and peanut butter together to create a sauce.
- Heat 1 tablespoon of coconut oil in a pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the cherry tomatoes, red bell pepper, and mushrooms to the pan. Stir-fry for 4-5 minutes until just tender. Remove from heat.
- Place one sheet of bánh tráng on a baking tray lined with parchment paper. Brush with remaining coconut oil.
- Spread half of the sautéed vegetable mixture evenly on top of the bánh tráng.
- Drizzle half of the sauce over the vegetables and sprinkle with fresh basil, cilantro, and chili flakes.
- Repeat the same process with the second sheet of bánh tráng and remaining ingredients.
- Bake in the preheated oven for 10-12 minutes or until the edges are crispy.
- Remove from the oven, slice, and serve hot.
