Ingredients

  • Glutinous rice - 200 grams
  • Water - 250 ml
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 medium, diced
  • Red onion - 1 small, sliced
  • Mushrooms - 100 grams, sliced
  • Spinach - 50 grams, chopped
  • Grilled chicken breast - 100 grams, shredded
  • Low-fat mozzarella cheese - 100 grams, shredded
  • Fresh basil - a handful, chopped
  • Black pepper - to taste

Steps

  1. Soak the glutinous rice in water for at least 4 hours or overnight, then drain.
  2. In a pot, combine the soaked rice, 250 ml of water, and salt. Cook on medium heat until water is absorbed and rice is tender, about 20 minutes.
  3. Once cooked, let the rice cool slightly, then transfer it to a mixing bowl. Add olive oil and mix well.
  4. Preheat your oven to 200°C (400°F).
  5. Spread the rice mixture evenly onto a baking sheet lined with parchment paper, forming a pizza crust about 1 cm thick.
  6. Bake the rice crust in the preheated oven for 15-20 minutes until slightly golden.
  7. While the crust is baking, prepare the toppings by sautéing the cherry tomatoes, bell pepper, red onion, and mushrooms in a pan over medium heat until softened, about 5-7 minutes.
  8. Remove the crust from the oven and layer the sautéed vegetables, spinach, shredded chicken, and mozzarella cheese on top.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  10. Remove from the oven, sprinkle with fresh basil and black pepper, then slice and serve warm.
