Ingredients
- Glutinous rice - 200 grams
- Water - 250 ml
- Salt - 1 teaspoon
- Olive oil - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Bell pepper - 1 medium, diced
- Red onion - 1 small, sliced
- Mushrooms - 100 grams, sliced
- Spinach - 50 grams, chopped
- Grilled chicken breast - 100 grams, shredded
- Low-fat mozzarella cheese - 100 grams, shredded
- Fresh basil - a handful, chopped
- Black pepper - to taste
Steps
- Soak the glutinous rice in water for at least 4 hours or overnight, then drain.
- In a pot, combine the soaked rice, 250 ml of water, and salt. Cook on medium heat until water is absorbed and rice is tender, about 20 minutes.
- Once cooked, let the rice cool slightly, then transfer it to a mixing bowl. Add olive oil and mix well.
- Preheat your oven to 200°C (400°F).
- Spread the rice mixture evenly onto a baking sheet lined with parchment paper, forming a pizza crust about 1 cm thick.
- Bake the rice crust in the preheated oven for 15-20 minutes until slightly golden.
- While the crust is baking, prepare the toppings by sautéing the cherry tomatoes, bell pepper, red onion, and mushrooms in a pan over medium heat until softened, about 5-7 minutes.
- Remove the crust from the oven and layer the sautéed vegetables, spinach, shredded chicken, and mozzarella cheese on top.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Remove from the oven, sprinkle with fresh basil and black pepper, then slice and serve warm.
