  • Chicken breast (cooked and shredded) - 100 grams
  • Mushrooms (sliced) - 50 grams
  • Bell pepper (sliced) - 50 grams
  • Spinach - 50 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Olive oil - 1 tablespoon
  • Fresh basil leaves - a handful
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, water, and salt to create a smooth batter. Let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a little olive oil.
  3. Pour a ladleful of the batter into the skillet, swirling it to create a thin crepe. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden.
  4. Carefully flip the crepe and cook for another 1-2 minutes. Remove from the skillet and repeat with the remaining batter, adding oil as needed.
  5. In a separate skillet, sauté the mushrooms and bell peppers in a little olive oil until tender, about 5 minutes. Add in the spinach and cook until wilted.
  6. On each crepe, layer the shredded chicken, sautéed vegetables, and sprinkle mozzarella cheese on top.
  7. Fold the crepe in half and cook for an additional 2-3 minutes on each side until the cheese melts.
  8. Garnish with fresh basil leaves and black pepper before serving.
