- Chicken breast (cooked and shredded) - 100 grams
- Mushrooms (sliced) - 50 grams
- Bell pepper (sliced) - 50 grams
- Spinach - 50 grams
- Mozzarella cheese (shredded) - 100 grams
- Olive oil - 1 tablespoon
- Fresh basil leaves - a handful
- Black pepper - to taste
Steps
- In a mixing bowl, combine rice flour, tapioca starch, water, and salt to create a smooth batter. Let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little olive oil.
- Pour a ladleful of the batter into the skillet, swirling it to create a thin crepe. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden.
- Carefully flip the crepe and cook for another 1-2 minutes. Remove from the skillet and repeat with the remaining batter, adding oil as needed.
- In a separate skillet, sauté the mushrooms and bell peppers in a little olive oil until tender, about 5 minutes. Add in the spinach and cook until wilted.
- On each crepe, layer the shredded chicken, sautéed vegetables, and sprinkle mozzarella cheese on top.
- Fold the crepe in half and cook for an additional 2-3 minutes on each side until the cheese melts.
- Garnish with fresh basil leaves and black pepper before serving.
