Ingredients

  • Rice flour - 100 grams
  • Tapioca starch - 50 grams
  • Water - 300 milliliters
  • Salt - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Mushrooms (sliced) - 100 grams
  • Bell pepper (sliced) - 50 grams
  • Cherry tomatoes (halved) - 100 grams
  • Fresh basil leaves - 10 grams
  • Soy sauce - 1 tablespoon
  • Black pepper - to taste
  • Chili flakes - to taste
  • Cheese (optional, shredded) - 50 grams

Steps

  1. In a mixing bowl, combine the rice flour, tapioca starch, salt, and water. Whisk until smooth and let it rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add the vegetable oil. Once hot, pour in half of the batter to form a round base.
  3. Cook for about 5 minutes, or until the edges start to lift and the bottom is golden brown. Flip carefully and cook for another 2-3 minutes.
  4. Remove the base from the pan and repeat with the remaining batter to make a second base.
  5. In the same skillet, add the sliced mushrooms and bell peppers, sautéing until softened, about 5 minutes. Add the cherry tomatoes and stir for another 2 minutes.
  6. Season the sautéed vegetables with soy sauce, black pepper, and chili flakes to taste.
  7. Spread the sautéed vegetable mixture evenly over one of the rice flour bases. If using, sprinkle shredded cheese on top.
  8. Cover the skillet and cook on low heat for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh basil leaves before slicing and serving.
