- Mushrooms (sliced) - 100 grams
- Bell pepper (sliced) - 50 grams
- Cherry tomatoes (halved) - 100 grams
- Fresh basil leaves - 10 grams
- Soy sauce - 1 tablespoon
- Black pepper - to taste
- Chili flakes - to taste
- Cheese (optional, shredded) - 50 grams
Steps
- In a mixing bowl, combine the rice flour, tapioca starch, salt, and water. Whisk until smooth and let it rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add the vegetable oil. Once hot, pour in half of the batter to form a round base.
- Cook for about 5 minutes, or until the edges start to lift and the bottom is golden brown. Flip carefully and cook for another 2-3 minutes.
- Remove the base from the pan and repeat with the remaining batter to make a second base.
- In the same skillet, add the sliced mushrooms and bell peppers, sautéing until softened, about 5 minutes. Add the cherry tomatoes and stir for another 2 minutes.
- Season the sautéed vegetables with soy sauce, black pepper, and chili flakes to taste.
- Spread the sautéed vegetable mixture evenly over one of the rice flour bases. If using, sprinkle shredded cheese on top.
- Cover the skillet and cook on low heat for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves before slicing and serving.
