Ingredients
- Tapioca flour - 150 grams
- Warm water - 200 ml
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Bell pepper - 50 grams, sliced
- Red onion - 50 grams, thinly sliced
- Mushrooms - 100 grams, sliced
- Fresh basil - 10 grams, chopped
- Soy sauce - 1 tablespoon
- Protein of choice (tofu, shrimp, or chicken) - 150 grams, cooked
- Black pepper - to taste
Steps
- In a mixing bowl, combine tapioca flour, warm water, and salt. Stir until you achieve a smooth batter.
- Heat a non-stick skillet over medium heat and add olive oil.
- Pour half of the tapioca batter into the skillet, swirling to form a round base, about 20 cm in diameter.
- Cook for 4-5 minutes until the bottom is set and slightly golden, then flip and cook for another 2-3 minutes. Remove from the skillet and repeat with the remaining batter.
- Preheat the oven to 200°C (400°F).
- On the cooked tapioca crusts, layer the cooked protein, cherry tomatoes, bell pepper, red onion, mushrooms, and fresh basil.
- Drizzle with soy sauce and sprinkle with black pepper.
- Bake in the preheated oven for 10-12 minutes until the vegetables are tender and slightly caramelized.
- Remove from the oven, let cool for a minute, then slice and serve warm.
