Ingredients

  • Tapioca flour - 150 grams
  • Warm water - 200 ml
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 50 grams, sliced
  • Red onion - 50 grams, thinly sliced
  • Mushrooms - 100 grams, sliced
  • Fresh basil - 10 grams, chopped
  • Soy sauce - 1 tablespoon
  • Protein of choice (tofu, shrimp, or chicken) - 150 grams, cooked
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine tapioca flour, warm water, and salt. Stir until you achieve a smooth batter.
  2. Heat a non-stick skillet over medium heat and add olive oil.
  3. Pour half of the tapioca batter into the skillet, swirling to form a round base, about 20 cm in diameter.
  4. Cook for 4-5 minutes until the bottom is set and slightly golden, then flip and cook for another 2-3 minutes. Remove from the skillet and repeat with the remaining batter.
  5. Preheat the oven to 200°C (400°F).
  6. On the cooked tapioca crusts, layer the cooked protein, cherry tomatoes, bell pepper, red onion, mushrooms, and fresh basil.
  7. Drizzle with soy sauce and sprinkle with black pepper.
  8. Bake in the preheated oven for 10-12 minutes until the vegetables are tender and slightly caramelized.
  9. Remove from the oven, let cool for a minute, then slice and serve warm.
