  • Bell pepper - 50 grams, diced
  • Mushrooms - 50 grams, sliced
  • Spring onions - 30 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the rice flour, tapioca starch, and salt. Gradually add water while whisking until you achieve a smooth batter.
  2. In another bowl, beat the eggs and then fold them into the batter mixture until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, spreading it evenly to form a round base.
  4. Cook the base for about 5-7 minutes until the bottom is golden brown and crispy. Check the edges to ensure it doesn't stick.
  5. Carefully flip the base using a spatula and cook for another 5 minutes until the other side is golden and cooked through. Remove from the skillet and keep warm.
  6. Repeat the process with the remaining batter to make the second base, adding more olive oil if needed.
  7. Once both bases are cooked, top each with diced bell pepper, sliced mushrooms, halved cherry tomatoes, and chopped spring onions.
  8. Drizzle with soy sauce and sprinkle black pepper. Add fresh basil on top.
  9. Cover the skillet with a lid and cook on low heat for an additional 5-7 minutes, allowing the vegetables to soften and the flavors to meld.
  10. Slice and serve hot, garnished with additional fresh herbs if desired.
