- Fresh basil - 10 grams, chopped
- Olive oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the rice flour, tapioca starch, and salt. Gradually add water while whisking until you achieve a smooth batter.
- In another bowl, beat the eggs and then fold them into the batter mixture until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, spreading it evenly to form a round base.
- Cook the base for about 5-7 minutes until the bottom is golden brown and crispy. Check the edges to ensure it doesn't stick.
- Carefully flip the base using a spatula and cook for another 5 minutes until the other side is golden and cooked through. Remove from the skillet and keep warm.
- Repeat the process with the remaining batter to make the second base, adding more olive oil if needed.
- Once both bases are cooked, top each with diced bell pepper, sliced mushrooms, halved cherry tomatoes, and chopped spring onions.
- Drizzle with soy sauce and sprinkle black pepper. Add fresh basil on top.
- Cover the skillet with a lid and cook on low heat for an additional 5-7 minutes, allowing the vegetables to soften and the flavors to meld.
- Slice and serve hot, garnished with additional fresh herbs if desired.
