  • Water - 250 milliliters
  • Salt - 1/2 teaspoon
  • Vegetable oil - 1 tablespoon
  • Cooked shrimp - 100 grams, chopped
  • Green onions - 2, finely chopped
  • Bean sprouts - 100 grams
  • Red bell pepper - 1/2, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Chili sauce - to taste

Steps

  1. In a mixing bowl, combine rice flour, tapioca starch, salt, and water to create a smooth batter.
  2. Heat a non-stick skillet over medium heat and add a little vegetable oil to coat the bottom.
  3. Pour a ladleful of the batter into the skillet to form a thin layer, swirling to cover the bottom evenly.
  4. Cook for about 2-3 minutes or until the edges start to lift and the surface is set.
  5. Sprinkle a portion of the chopped shrimp, green onions, bean sprouts, and red bell pepper onto the batter.
  6. Cover the skillet with a lid and cook for another 2-3 minutes until the toppings are heated through.
  7. Gently fold the pizza in half and slide it onto a plate.
  8. Repeat the process with the remaining batter and toppings to make a second pizza.
  9. Garnish with chopped cilantro and serve with lime wedges and chili sauce on the side.
