- Bean sprouts - 100 grams
- Red bell pepper - 1/2, thinly sliced
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Chili sauce - to taste
Steps
- In a mixing bowl, combine rice flour, tapioca starch, salt, and water to create a smooth batter.
- Heat a non-stick skillet over medium heat and add a little vegetable oil to coat the bottom.
- Pour a ladleful of the batter into the skillet to form a thin layer, swirling to cover the bottom evenly.
- Cook for about 2-3 minutes or until the edges start to lift and the surface is set.
- Sprinkle a portion of the chopped shrimp, green onions, bean sprouts, and red bell pepper onto the batter.
- Cover the skillet with a lid and cook for another 2-3 minutes until the toppings are heated through.
- Gently fold the pizza in half and slide it onto a plate.
- Repeat the process with the remaining batter and toppings to make a second pizza.
- Garnish with chopped cilantro and serve with lime wedges and chili sauce on the side.
