- Rice noodles - 100 grams

- Zucchini - 1 small, thinly sliced
- Mushrooms - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Green onions - 2, chopped
- Fresh basil leaves - 10, chopped
- Soy sauce - 1 tablespoon
- Chili sauce - 1 teaspoon (optional)
- Mozzarella cheese - 100 grams, shredded
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the red bell pepper, zucchini, and mushrooms, sautéing for about 5-7 minutes until they are tender.
- Stir in the cherry tomatoes, green onions, soy sauce, and chili sauce (if using), and cook for another 2-3 minutes. Season with salt and black pepper to taste.
- In a large bowl, combine the cooked rice noodles with the sautéed vegetables and chopped basil. Mix well to combine.
- Preheat your oven to 200°C (390°F). Grease a pizza stone or baking tray with the remaining tablespoon of olive oil.
- Spread the rice noodle and vegetable mixture evenly on the prepared pizza stone to form a crust. Make sure it's compact and holds together.
- Sprinkle the shredded mozzarella cheese evenly on top of the noodle crust.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the noodle crust are golden and crispy.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
