Ingredients

  • Rice noodles - 100 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, thinly sliced
  • Zucchini - 1 small, thinly sliced
  • Mushrooms - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Green onions - 2, chopped
  • Fresh basil leaves - 10, chopped
  • Soy sauce - 1 tablespoon
  • Chili sauce - 1 teaspoon (optional)
  • Mozzarella cheese - 100 grams, shredded
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the red bell pepper, zucchini, and mushrooms, sautéing for about 5-7 minutes until they are tender.
  3. Stir in the cherry tomatoes, green onions, soy sauce, and chili sauce (if using), and cook for another 2-3 minutes. Season with salt and black pepper to taste.
  4. In a large bowl, combine the cooked rice noodles with the sautéed vegetables and chopped basil. Mix well to combine.
  5. Preheat your oven to 200°C (390°F). Grease a pizza stone or baking tray with the remaining tablespoon of olive oil.
  6. Spread the rice noodle and vegetable mixture evenly on the prepared pizza stone to form a crust. Make sure it's compact and holds together.
  7. Sprinkle the shredded mozzarella cheese evenly on top of the noodle crust.
  8. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly, and the edges of the noodle crust are golden and crispy.
  9. Remove from the oven, let cool for a few minutes, slice, and serve warm.
