Ingredients

  • Chicken breast - 250 grams, sliced
  • Rice noodles - 100 grams
  • Chicken broth - 1 liter, kosher
  • Onion - 1 medium, halved
  • Ginger - 30 grams, sliced
  • Star anise - 2 pods
  • Cinnamon stick - 1
  • Cloves - 3 whole
  • Fish sauce - 2 tablespoons, kosher
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 10 grams, chopped
  • Green onions - 2, sliced
  • Lime - 1, cut into wedges
  • Bean sprouts - 100 grams
  • Chili pepper - 1, sliced (optional)

Steps

  1. In a large pot, bring the kosher chicken broth to a boil and add the halved onion, sliced ginger, star anise, cinnamon stick, and cloves.
  2. Reduce the heat and let the broth simmer for 15 minutes to allow the flavors to infuse.
  3. Add the sliced chicken breast to the broth and cook until the chicken is no longer pink, about 5 minutes.
  4. Remove the chicken from the broth, shred it into bite-sized pieces, and set aside.
  5. In a separate pot, cook the rice noodles according to package instructions, then drain and set aside.
  6. Strain the broth to remove the spices and onion, returning it to the pot. Season with kosher fish sauce, salt, and black pepper.
  7. To serve, divide the cooked rice noodles into two bowls, top with shredded chicken, and ladle the hot broth over the noodles.
  8. Garnish with fresh cilantro, sliced green onions, lime wedges, bean sprouts, and sliced chili pepper if desired.
