Ingredients
- Beef shank - 300 grams
- Beef bones - 200 grams
- Rice noodles (Bánh phở) - 150 grams
- Onion - 1 medium, halved
- Ginger - 1 piece (5 cm), sliced
- Star anise - 2 pieces
- Cinnamon stick - 1 piece
- Cloves - 3 pieces
- Fish sauce (kosher) - 2 tablespoons
- Salt - to taste
- Fresh cilantro - 20 grams, chopped
- Fresh basil - 20 grams, leaves only
- Bean sprouts - 100 grams
- Lime - 1, cut into wedges
- Chili pepper - 1, sliced (optional)
- Water - 1.5 liters
Steps
- In a large pot, add the beef bones and shank, cover with 1.5 liters of water, and bring to a boil.
- Once boiling, reduce heat and simmer for 10 minutes. Skim off any foam that rises to the top.
- Add the halved onion, sliced ginger, star anise, cinnamon stick, and cloves to the pot.
- Simmer on low heat for 1.5 hours until the beef is tender and the broth is flavorful.
- Remove the beef shank and bones from the pot. Strain the broth through a fine sieve, discarding the solids.
- Return the strained broth to the pot, season with kosher fish sauce and salt to taste.
- Cook the rice noodles according to package instructions, then drain and set aside.
- To serve, place a portion of noodles in each bowl, top with slices of beef shank, and ladle hot broth over the top.
- Garnish with fresh cilantro, basil, bean sprouts, lime wedges, and chili slices as desired.
