Ingredients

  • Beef shank - 300 grams
  • Beef bones - 200 grams
  • Rice noodles (Bánh phở) - 150 grams
  • Onion - 1 medium, halved
  • Ginger - 1 piece (5 cm), sliced
  • Star anise - 2 pieces
  • Cinnamon stick - 1 piece
  • Cloves - 3 pieces
  • Fish sauce (kosher) - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - 20 grams, chopped
  • Fresh basil - 20 grams, leaves only
  • Bean sprouts - 100 grams
  • Lime - 1, cut into wedges
  • Chili pepper - 1, sliced (optional)
  • Water - 1.5 liters

Steps

  1. In a large pot, add the beef bones and shank, cover with 1.5 liters of water, and bring to a boil.
  2. Once boiling, reduce heat and simmer for 10 minutes. Skim off any foam that rises to the top.
  3. Add the halved onion, sliced ginger, star anise, cinnamon stick, and cloves to the pot.
  4. Simmer on low heat for 1.5 hours until the beef is tender and the broth is flavorful.
  5. Remove the beef shank and bones from the pot. Strain the broth through a fine sieve, discarding the solids.
  6. Return the strained broth to the pot, season with kosher fish sauce and salt to taste.
  7. Cook the rice noodles according to package instructions, then drain and set aside.
  8. To serve, place a portion of noodles in each bowl, top with slices of beef shank, and ladle hot broth over the top.
  9. Garnish with fresh cilantro, basil, bean sprouts, lime wedges, and chili slices as desired.
