Steps
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add minced garlic and ginger, sauté for about 1 minute until fragrant.
- Add sliced chicken breast to the skillet and cook until it's no longer pink, about 5-7 minutes.
- Stir in sliced bell pepper and mushrooms, cooking for another 3-4 minutes until tender.
- Add the spiralized zucchini to the skillet, followed by soy sauce, fish sauce, and sesame oil.
- Toss everything together and cook for an additional 2-3 minutes until the zoodles are just tender.
- Season with ground black pepper to taste.
- Remove from heat, garnish with chopped green onions and fresh cilantro before serving.
- Serve immediately, optionally with lime wedges on the side.
