- Fresh clams - 300 grams
- Rice noodles (bánh phở) - 100 grams
- Beef bone broth - 500 ml
- Shallots - 2, sliced
- Ginger - 1 inch, sliced
- Star anise - 2 pods
- Cinnamon stick - 1
- Fish sauce - 2 tablespoons
- Lime - 1, cut into wedges
- Fresh cilantro - 20 grams, chopped
- Green onions - 2, sliced
- Thai basil - a handful
- Chili pepper - to taste, sliced
- Salt - to taste

Steps
- Rinse the fresh clams under cold water to remove any sand or grit, then set aside.
- In a pot, bring the beef bone broth to a simmer over medium heat.
- Add the sliced shallots, ginger, star anise, and cinnamon stick to the broth. Let it simmer for about 10 minutes to infuse the flavors.
- Add the rinsed clams to the broth and cover the pot. Cook for about 5-7 minutes until the clams open up.
- Stir in the fish sauce and season with salt and pepper to taste. Remove from heat.
- In another pot, cook the rice noodles according to package instructions, then drain and set aside.
- To serve, divide the cooked noodles into two bowls, ladle the hot clam broth and clams over the noodles.
- Garnish with fresh cilantro, green onions, Thai basil, and sliced chili pepper. Serve with lime wedges on the side.
