Ingredients
- Beef broth - 500 ml
- Beef sirloin - 200 grams, thinly sliced
- Zucchini - 1 medium, spiralized
- Garlic - 2 cloves, minced
- Ginger - 1 inch, sliced
- Onion - 1 small, thinly sliced
- Fish sauce - 1 tablespoon
- Soy sauce (or coconut aminos) - 1 tablespoon
- Fresh basil - a handful, for garnish
- Cilantro - a handful, for garnish
- Lime - 1, cut into wedges
- Chili pepper - 1, sliced (optional)
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, combine the beef broth, minced garlic, sliced ginger, and onion. Bring to a simmer over medium heat.
- Once simmering, add the fish sauce, soy sauce, and season with salt and pepper. Let it simmer for about 15 minutes to allow the flavors to meld.
- While the broth is simmering, prepare the zucchini noodles using a spiralizer. Set aside.
- After 15 minutes, add the thinly sliced beef sirloin to the simmering broth. Cook for about 3-5 minutes until the beef is cooked through.
- In the last minute, add the spiralized zucchini to the pot to warm them up.
- Serve the soup in bowls, garnishing with fresh basil, cilantro, and lime wedges. Add sliced chili pepper for an extra kick if desired.
