Ingredients

  • Beef broth - 500 ml
  • Beef sirloin - 200 grams, thinly sliced
  • Zucchini - 1 medium, spiralized
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, sliced
  • Onion - 1 small, thinly sliced
  • Fish sauce - 1 tablespoon
  • Soy sauce (or coconut aminos) - 1 tablespoon
  • Fresh basil - a handful, for garnish
  • Cilantro - a handful, for garnish
  • Lime - 1, cut into wedges
  • Chili pepper - 1, sliced (optional)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, combine the beef broth, minced garlic, sliced ginger, and onion. Bring to a simmer over medium heat.
  2. Once simmering, add the fish sauce, soy sauce, and season with salt and pepper. Let it simmer for about 15 minutes to allow the flavors to meld.
  3. While the broth is simmering, prepare the zucchini noodles using a spiralizer. Set aside.
  4. After 15 minutes, add the thinly sliced beef sirloin to the simmering broth. Cook for about 3-5 minutes until the beef is cooked through.
  5. In the last minute, add the spiralized zucchini to the pot to warm them up.
  6. Serve the soup in bowls, garnishing with fresh basil, cilantro, and lime wedges. Add sliced chili pepper for an extra kick if desired.
