Ingredients

  • Star anise - 2 pods
  • Cinnamon stick - 1
  • Cloves - 3
  • Fish sauce - 2 tablespoons
  • Lime - 1, juiced
  • Cilantro - a handful, chopped
  • Green onions - 2, sliced
  • Zucchini - 1 medium, spiralized
  • Mushrooms - 100 grams, sliced
  • Chili pepper - 1, sliced (optional)
  • Salt - to taste

Steps

  1. In a large pot, combine chicken broth and water, then add sliced shallots, ginger, star anise, cinnamon stick, and cloves. Bring to a boil.
  2. Once boiling, add the chicken breast and reduce the heat to a simmer. Cook for 20 minutes or until the chicken is fully cooked.
  3. Remove the chicken from the pot and let it rest for a few minutes before shredding it into bite-sized pieces.
  4. Strain the broth to remove the whole spices and shallots, returning the clear broth to the pot.
  5. Add fish sauce, lime juice, and salt to the broth, then stir in the sliced mushrooms and zucchini. Simmer for an additional 5-7 minutes until the vegetables are tender.
  6. To serve, divide the shredded chicken into two bowls, ladle the hot broth and vegetables over the chicken, and garnish with chopped cilantro, green onions, and sliced chili pepper if desired.
