- Water - 500 ml
- Shallots - 2, sliced
- Ginger - 1 thumb-sized piece, sliced
- Star anise - 2 pods
- Cinnamon stick - 1
- Cloves - 3
- Fish sauce - 2 tablespoons
- Lime - 1, juiced
- Cilantro - a handful, chopped
- Green onions - 2, sliced
- Zucchini - 1 medium, spiralized
- Mushrooms - 100 grams, sliced
- Chili pepper - 1, sliced (optional)
- Salt - to taste
Steps
- In a large pot, combine chicken broth and water, then add sliced shallots, ginger, star anise, cinnamon stick, and cloves. Bring to a boil.
- Once boiling, add the chicken breast and reduce the heat to a simmer. Cook for 20 minutes or until the chicken is fully cooked.
- Remove the chicken from the pot and let it rest for a few minutes before shredding it into bite-sized pieces.
- Strain the broth to remove the whole spices and shallots, returning the clear broth to the pot.
- Add fish sauce, lime juice, and salt to the broth, then stir in the sliced mushrooms and zucchini. Simmer for an additional 5-7 minutes until the vegetables are tender.
- To serve, divide the shredded chicken into two bowls, ladle the hot broth and vegetables over the chicken, and garnish with chopped cilantro, green onions, and sliced chili pepper if desired.
