- Chicken breast - 250g
- Chicken thighs - 250g
- Rice noodles (bánh phở) - 150g
- Water - 1.5 liters
- Onion - 1 medium, halved
- Ginger - 30g, sliced
- Star anise - 2 whole
- Cinnamon stick - 1 piece
- Cloves - 3 whole
- Fish sauce - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Green onions - 2, chopped
- Cilantro - 1/4 cup, chopped
- Basil leaves - 1/4 cup
- Lime - 1, cut into wedges
- Chili peppers - 1, sliced (optional)
Steps
- In a large pot, combine the water, chicken breasts, chicken thighs, halved onion, sliced ginger, star anise, cinnamon stick, cloves, fish sauce, and salt. Bring to a boil over high heat.
- Once boiling, reduce the heat to low and simmer for 30-40 minutes, skimming off any foam that rises to the surface.
- Remove the chicken from the broth and set aside to cool. Strain the broth through a fine-mesh sieve into another pot to remove the solids.
- Return the strained broth to the heat and add black pepper. Simmer gently while you prepare the rice noodles according to the package instructions.
- Shred the cooled chicken into bite-sized pieces.
- Divide the cooked rice noodles between two bowls, top with shredded chicken, and ladle the hot broth over the top.
- Garnish with chopped green onions, cilantro, basil leaves, and serve with lime wedges and sliced chili peppers on the side.
