Ingredients

  • Chicken breast - 250g
  • Chicken thighs - 250g
  • Rice noodles (bánh phở) - 150g
  • Water - 1.5 liters
  • Onion - 1 medium, halved
  • Ginger - 30g, sliced
  • Star anise - 2 whole
  • Cinnamon stick - 1 piece
  • Cloves - 3 whole
  • Fish sauce - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped
  • Cilantro - 1/4 cup, chopped
  • Basil leaves - 1/4 cup
  • Lime - 1, cut into wedges
  • Chili peppers - 1, sliced (optional)

Steps

  1. In a large pot, combine the water, chicken breasts, chicken thighs, halved onion, sliced ginger, star anise, cinnamon stick, cloves, fish sauce, and salt. Bring to a boil over high heat.
  2. Once boiling, reduce the heat to low and simmer for 30-40 minutes, skimming off any foam that rises to the surface.
  3. Remove the chicken from the broth and set aside to cool. Strain the broth through a fine-mesh sieve into another pot to remove the solids.
  4. Return the strained broth to the heat and add black pepper. Simmer gently while you prepare the rice noodles according to the package instructions.
  5. Shred the cooled chicken into bite-sized pieces.
  6. Divide the cooked rice noodles between two bowls, top with shredded chicken, and ladle the hot broth over the top.
  7. Garnish with chopped green onions, cilantro, basil leaves, and serve with lime wedges and sliced chili peppers on the side.
