  • Cucumber - 1 small (julienned)
  • Red bell pepper - 1/2 (sliced)
  • Fresh mint leaves - 10g
  • Fresh cilantro - 10g
  • Chili pepper - 1 (sliced, optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, bring the chicken broth to a simmer and add sliced ginger and minced garlic. Let it cook for about 5 minutes to infuse the flavors.
  2. Add the chicken breast to the broth and cook for 15 minutes, or until fully cooked. Remove the chicken, shred it, and set aside.
  3. In the same broth, add lime juice and fish sauce, adjusting the taste with salt and black pepper as needed.
  4. Meanwhile, cook the rice noodles according to the package instructions, then drain and rinse them under cold water.
  5. To assemble, divide the noodles into bowls, top with shredded chicken, julienned carrots, cucumber, and red bell pepper.
  6. Pour the hot broth over the noodles and vegetables, then garnish with fresh mint, cilantro, and sliced chili pepper if desired.
