Ingredients
- Beef brisket - 200g
- Chicken breast - 150g
- Rice noodles - 150g
- Beef bone - 500g
- Onion - 1 medium, halved
- Ginger - 50g, sliced
- Star anise - 2 pods
- Cinnamon stick - 1
- Cloves - 3
- Fish sauce - 2 tablespoons
- Salt - to taste
- Fresh basil - a handful
- Bean sprouts - 100g
- Lime - 1, cut into wedges
- Chili peppers - 1, sliced
- Green onions - 2, chopped
Steps
- In a large pot, add the beef bones and cover with water. Bring to a boil and then simmer for 15 minutes to remove impurities. Discard the water and rinse the bones.
- Return the bones to the pot and add 2 liters of fresh water, the halved onion, sliced ginger, star anise, cinnamon stick, and cloves. Simmer for 45 minutes to 1 hour, skimming off any foam that rises to the surface.
- After the broth is ready, remove the bones and strain the liquid into a clean pot. Add fish sauce and salt to taste.
- While the broth is simmering, prepare the rice noodles according to package instructions. Drain and set aside.
- In a separate pot, poach the chicken breast in simmering water for about 15 minutes until cooked through. Remove and slice thinly. Cook the beef brisket in the simmering broth for 3-4 minutes until tender, then slice thinly.
- To serve, divide the cooked noodles between two bowls. Top with slices of beef brisket and chicken, then ladle the hot broth over the top.
- Garnish with fresh basil, bean sprouts, lime wedges, sliced chili peppers, and chopped green onions as desired.
