Ingredients

  • Beef brisket - 200g
  • Chicken breast - 150g
  • Rice noodles - 150g
  • Beef bone - 500g
  • Onion - 1 medium, halved
  • Ginger - 50g, sliced
  • Star anise - 2 pods
  • Cinnamon stick - 1
  • Cloves - 3
  • Fish sauce - 2 tablespoons
  • Salt - to taste
  • Fresh basil - a handful
  • Bean sprouts - 100g
  • Lime - 1, cut into wedges
  • Chili peppers - 1, sliced
  • Green onions - 2, chopped

Steps

  1. In a large pot, add the beef bones and cover with water. Bring to a boil and then simmer for 15 minutes to remove impurities. Discard the water and rinse the bones.
  2. Return the bones to the pot and add 2 liters of fresh water, the halved onion, sliced ginger, star anise, cinnamon stick, and cloves. Simmer for 45 minutes to 1 hour, skimming off any foam that rises to the surface.
  3. After the broth is ready, remove the bones and strain the liquid into a clean pot. Add fish sauce and salt to taste.
  4. While the broth is simmering, prepare the rice noodles according to package instructions. Drain and set aside.
  5. In a separate pot, poach the chicken breast in simmering water for about 15 minutes until cooked through. Remove and slice thinly. Cook the beef brisket in the simmering broth for 3-4 minutes until tender, then slice thinly.
  6. To serve, divide the cooked noodles between two bowls. Top with slices of beef brisket and chicken, then ladle the hot broth over the top.
  7. Garnish with fresh basil, bean sprouts, lime wedges, sliced chili peppers, and chopped green onions as desired.
