  • Cinnamon stick - 1 piece
  • Cloves - 3 whole
  • Fish sauce - 2 tablespoons
  • Lime - 1, cut into wedges
  • Fresh basil - 1 cup, for garnish
  • Cilantro - 1/2 cup, for garnish
  • Chili peppers - 1, sliced (optional)
  • Bean sprouts - 1 cup (optional)

Steps

  1. In a large pot, bring the beef broth to a simmer over medium heat.
  2. Add sliced onion, ginger, star anise, cinnamon stick, and cloves to the broth.
  3. Simmer the broth for about 15 minutes to infuse the flavors.
  4. While the broth is simmering, cook the rice noodles according to package instructions, then drain and set aside.
  5. After 15 minutes, add the beef meatballs to the broth and cook for an additional 5-7 minutes until heated through.
  6. Stir in the fish sauce to enhance the flavor of the broth.
  7. To serve, place a portion of cooked rice noodles in each bowl, ladle the hot broth and meatballs over the noodles.
  8. Garnish with fresh basil, cilantro, sliced chili peppers, and a side of lime wedges.
  9. Optionally, add bean sprouts for crunch.
