- Chili peppers - 1, sliced (optional)
- Bean sprouts - 1 cup (optional)
Steps
- In a large pot, bring the beef broth to a simmer over medium heat.
- Add sliced onion, ginger, star anise, cinnamon stick, and cloves to the broth.
- Simmer the broth for about 15 minutes to infuse the flavors.
- While the broth is simmering, cook the rice noodles according to package instructions, then drain and set aside.
- After 15 minutes, add the beef meatballs to the broth and cook for an additional 5-7 minutes until heated through.
- Stir in the fish sauce to enhance the flavor of the broth.
- To serve, place a portion of cooked rice noodles in each bowl, ladle the hot broth and meatballs over the noodles.
- Garnish with fresh basil, cilantro, sliced chili peppers, and a side of lime wedges.
