- Beef brisket - 250 grams
- Beef bones - 300 grams
- Water - 1.5 liters
- Onion - 1 medium, halved
- Ginger - 1 piece (about 5 cm), sliced
- Star anise - 2 whole
- Cinnamon stick - 1
- Cloves - 3 whole
- Fish sauce - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bean sprouts - 100 grams
- Fresh herbs (Thai basil, cilantro) - 1 small bunch each
- Lime - 1, cut into wedges
- Chili (fresh or dried) - to taste
Steps
- In a large pot, add the beef bones and cover with 1.5 liters of water. Bring to a boil and let it simmer for 15 minutes.
- Remove the foam that rises to the surface and add the halved onion, sliced ginger, star anise, cinnamon stick, cloves, salt, and black pepper.
- Simmer the broth on low heat for about 60 minutes to allow the flavors to develop.
- In the last 15 minutes of cooking, add the beef brisket to the pot to cook through.
- Once cooked, remove the brisket and let it rest for a few minutes before slicing it thinly.
- Strain the broth to remove the spices and solids, returning the clear broth to the pot.
- Stir in the fish sauce and adjust seasoning if necessary.
- To serve, place sliced brisket in a bowl, pour the hot broth over it, and top with bean sprouts, fresh herbs, lime wedges, and chili as desired.
