Ingredients

  • Beef brisket - 250 grams
  • Beef bones - 300 grams
  • Water - 1.5 liters
  • Onion - 1 medium, halved
  • Ginger - 1 piece (about 5 cm), sliced
  • Star anise - 2 whole
  • Cinnamon stick - 1
  • Cloves - 3 whole
  • Fish sauce - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bean sprouts - 100 grams
  • Fresh herbs (Thai basil, cilantro) - 1 small bunch each
  • Lime - 1, cut into wedges
  • Chili (fresh or dried) - to taste

Steps

  1. In a large pot, add the beef bones and cover with 1.5 liters of water. Bring to a boil and let it simmer for 15 minutes.
  2. Remove the foam that rises to the surface and add the halved onion, sliced ginger, star anise, cinnamon stick, cloves, salt, and black pepper.
  3. Simmer the broth on low heat for about 60 minutes to allow the flavors to develop.
  4. In the last 15 minutes of cooking, add the beef brisket to the pot to cook through.
  5. Once cooked, remove the brisket and let it rest for a few minutes before slicing it thinly.
  6. Strain the broth to remove the spices and solids, returning the clear broth to the pot.
  7. Stir in the fish sauce and adjust seasoning if necessary.
  8. To serve, place sliced brisket in a bowl, pour the hot broth over it, and top with bean sprouts, fresh herbs, lime wedges, and chili as desired.
