Ingredients

  • Beef brisket - 200 grams
  • Rice noodles (Bánh phở) - 150 grams
  • Beef bones - 500 grams
  • Onion - 1 medium, halved
  • Ginger - 30 grams, sliced
  • Star anise - 2 pods
  • Cinnamon stick - 1 piece
  • Cloves - 4 pieces
  • Fish sauce - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh basil leaves - 20 grams
  • Bean sprouts - 100 grams
  • Lime - 1, cut into wedges
  • Chili (optional) - 1, sliced

Steps

  1. In a large pot, add the beef bones and cover with water. Bring to a boil over high heat for 10 minutes, then drain and rinse the bones to remove impurities.
  2. Return the bones to the pot, add 2 liters of fresh water, onion, ginger, star anise, cinnamon, and cloves. Bring to a boil, then reduce the heat and simmer for 1.5 hours.
  3. In the last 30 minutes of simmering, add the beef brisket to the pot to cook until tender.
  4. Once cooked, remove the brisket and let it rest for a few minutes before slicing thinly.
  5. Strain the broth to remove the solids, returning the liquid to the pot. Season with fish sauce, salt, and black pepper.
  6. Cook the rice noodles according to package instructions, then drain and divide them into two bowls.
  7. Ladle the hot broth over the noodles, adding sliced beef brisket.
  8. Garnish with fresh basil leaves, bean sprouts, lime wedges, and sliced chili if desired. Serve immediately.
