Ingredients

  • Duck breast - 300 grams
  • Garlic - 3 cloves, minced

  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lemon juice - 2 tablespoons
  • Brown erythritol - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh mint - 10 grams, for garnish
  • Fresh cilantro - 10 grams, for garnish
  • Lettuce leaves - 4 large, for wrapping

Steps

  1. In a bowl, combine minced garlic, chopped shallots, fish sauce, soy sauce, lemon juice, brown erythritol, black pepper, and olive oil to create the marinade.
  2. Score the skin of the duck breast lightly to help render the fat, then add the duck to the marinade, ensuring it's well coated. Marinate for at least 15 minutes.
  3. Preheat your grill or a grill pan over medium-high heat.
  4. Place the marinated duck breast skin-side down on the grill and cook for about 6-8 minutes until the skin is crispy.
  5. Flip the duck breast and cook for an additional 4-6 minutes, or until the internal temperature reaches 65°C (150°F) for medium doneness.
  6. Remove the duck from the grill and let it rest for 5 minutes before slicing thinly.
  7. Serve the sliced duck breast on a plate with fresh mint, cilantro, and lettuce leaves for wrapping.
