Ingredients
- Duck breast - 300 grams
- Garlic - 3 cloves, minced
- Shallots - 2, finely chopped
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lemon juice - 2 tablespoons
- Brown erythritol - 1 tablespoon
- Black pepper - 1 teaspoon
- Olive oil - 1 tablespoon
- Fresh mint - 10 grams, for garnish
- Fresh cilantro - 10 grams, for garnish
- Lettuce leaves - 4 large, for wrapping
Steps
- In a bowl, combine minced garlic, chopped shallots, fish sauce, soy sauce, lemon juice, brown erythritol, black pepper, and olive oil to create the marinade.
- Score the skin of the duck breast lightly to help render the fat, then add the duck to the marinade, ensuring it's well coated. Marinate for at least 15 minutes.
- Preheat your grill or a grill pan over medium-high heat.
- Place the marinated duck breast skin-side down on the grill and cook for about 6-8 minutes until the skin is crispy.
- Flip the duck breast and cook for an additional 4-6 minutes, or until the internal temperature reaches 65°C (150°F) for medium doneness.
- Remove the duck from the grill and let it rest for 5 minutes before slicing thinly.
- Serve the sliced duck breast on a plate with fresh mint, cilantro, and lettuce leaves for wrapping.
