Ingredients

  • Rice paper - 4 sheets
  • Firm tofu - 200 grams, crumbled
  • Mushrooms (shiitake or button) - 100 grams, finely chopped
  • Carrots - 50 grams, grated
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Peanut butter - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh herbs (mint, cilantro) - handful, chopped
  • Lettuce leaves - for serving
  • Cucumber - 1, julienned
  • Peanut sauce - for dipping (store-bought or homemade)

Steps

  1. In a large mixing bowl, combine crumbled tofu, chopped mushrooms, grated carrots, green onion, minced garlic, soy sauce, sesame oil, peanut butter, brown sugar, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Preheat a grill or grill pan over medium heat. While it heats, form the tofu mixture into small patties or logs, about 5 cm long.
  3. Once the grill is hot, lightly oil the surface and place the patties on it. Grill for about 5-7 minutes on each side, until golden brown and slightly charred.
  4. While the patties are grilling, prepare the rice paper. Soak each rice paper sheet in warm water for about 10-15 seconds, or until soft. Lay them flat on a clean surface.
  5. Once the patties are cooked, place them in the center of each rice paper sheet, top with chopped fresh herbs, a few pieces of cucumber, and a lettuce leaf.
  6. Wrap the rice paper around the filling, folding in the sides first, then rolling from the bottom to the top. Repeat for all rice paper sheets.
  7. Serve the rolls with peanut sauce for dipping and enjoy your homemade Nem Nướng Chay!
