- Ground pork - 250 grams
- Garlic, minced - 2 cloves
- Shallots, minced - 1 medium
- Fish sauce - 2 tablespoons
- Sugar - 1 teaspoon
- Black pepper - 1 teaspoon
- Sesame oil - 1 teaspoon
- Rice paper sheets - 4 sheets
- Lettuce leaves - 4 large
- Fresh herbs (mint, cilantro, basil) - 1 cup mixed
- Cucumber, julienned - 1 small
- Carrot, julienned - 1 small
- Peanut sauce (for dipping) - 4 tablespoons
Steps
- In a mixing bowl, combine the ground pork, minced garlic, minced shallots, fish sauce, sugar, black pepper, and sesame oil. Mix well until all ingredients are evenly incorporated.
- Divide the pork mixture into 4 equal portions and shape each portion around a skewer, pressing firmly to form a cylindrical shape.
- Preheat your grill or grill pan over medium-high heat. Grill the pork skewers for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
- While the skewers are cooking, prepare the fresh vegetables. Wash the lettuce leaves and herbs, and julienne the cucumber and carrot.
- Once the skewers are done, remove them from the grill and let them rest for a couple of minutes.
- To serve, take a rice paper sheet and dip it in warm water for a few seconds until softened. Place the lettuce, fresh herbs, cucumber, and carrot on the rice paper, and add a grilled pork skewer on top.
- Wrap the rice paper around the fillings tightly, and serve with peanut sauce for dipping.
