Ingredients

  • Ground pork - 250 grams
  • Garlic, minced - 2 cloves
  • Shallots, minced - 1 medium
  • Fish sauce - 2 tablespoons
  • Sugar - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Rice paper sheets - 4 sheets
  • Lettuce leaves - 4 large
  • Fresh herbs (mint, cilantro, basil) - 1 cup mixed
  • Cucumber, julienned - 1 small
  • Carrot, julienned - 1 small
  • Peanut sauce (for dipping) - 4 tablespoons

Steps

  1. In a mixing bowl, combine the ground pork, minced garlic, minced shallots, fish sauce, sugar, black pepper, and sesame oil. Mix well until all ingredients are evenly incorporated.
  2. Divide the pork mixture into 4 equal portions and shape each portion around a skewer, pressing firmly to form a cylindrical shape.
  3. Preheat your grill or grill pan over medium-high heat. Grill the pork skewers for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
  4. While the skewers are cooking, prepare the fresh vegetables. Wash the lettuce leaves and herbs, and julienne the cucumber and carrot.
  5. Once the skewers are done, remove them from the grill and let them rest for a couple of minutes.
  6. To serve, take a rice paper sheet and dip it in warm water for a few seconds until softened. Place the lettuce, fresh herbs, cucumber, and carrot on the rice paper, and add a grilled pork skewer on top.
  7. Wrap the rice paper around the fillings tightly, and serve with peanut sauce for dipping.
