Ingredients

  • Fresh cilantro - 30g, roughly chopped
  • Fresh mint - 15g, roughly chopped
  • Roasted peanuts - 30g, roughly chopped
  • Lime juice - 2 tablespoons (30ml)
  • Fish sauce - 1 tablespoon (15ml)
  • Sugar - 1 teaspoon (5g)
  • Chili pepper - 1 small, finely sliced (optional)

Steps

  1. Peel and julienne the green mango, carrot, and red bell pepper into thin strips.
  2. In a large mixing bowl, combine the julienned mango, carrot, red bell pepper, cilantro, and mint.
  3. In a separate small bowl, whisk together the lime juice, fish sauce, and sugar until the sugar is dissolved.
  4. Pour the dressing over the salad mixture and toss well to combine all ingredients.
  5. If using, add the finely sliced chili pepper for extra heat and mix again.
  6. Top the salad with the chopped roasted peanuts before serving.
