  • Rice vinegar - 15 ml

  • Garlic - 1 clove, minced
  • Red chili - 1 small, sliced (optional)

Steps

  1. In a large bowl, combine the shredded green papaya, shredded carrot, julienned mango, and sliced red bell pepper.
  2. In a separate small bowl, whisk together lime juice, soy sauce, rice vinegar, sugar, minced garlic, and sliced red chili until the sugar dissolves.
  3. Pour the dressing over the vegetable mixture and toss well to coat all the ingredients evenly.
  4. Gently fold in the chopped cilantro and mint, mixing them into the salad.
  5. Let the salad sit for about 5 minutes to allow the flavors to meld.
  6. Top with crushed roasted peanuts before serving.
