- Pork shoulder - 200 grams
- Carrot - 1 medium, julienned
- Cucumber - 1 small, julienned
- Red bell pepper - 1 small, julienned
- Fresh cilantro - 20 grams, chopped
- Fresh mint - 20 grams, chopped
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Chili pepper - 1 small, thinly sliced (optional)
- Peanuts - 30 grams, crushed (for garnish)
Steps
- In a pot, bring water to a boil and add the pork shoulder. Cook for about 15-20 minutes until the pork is fully cooked and tender.
- Remove the pork from the pot and let it cool. Once cooled, slice it thinly.
- In a large mixing bowl, combine the julienned carrot, cucumber, red bell pepper, chopped cilantro, and mint.
- In a small bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper to create the dressing.
- Add the sliced pork to the vegetable mixture and pour the dressing over it. Toss everything together until well combined.
- Serve the salad in bowls, garnished with crushed peanuts on top.
