Ingredients

  • Chicken breast - 200 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Fresh cilantro - 20 grams, chopped
  • Fresh mint - 20 grams, chopped
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Sugar - 5 grams
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, sliced (optional)
  • Peanuts - 30 grams, crushed

Steps

  1. Cook the chicken breast in boiling water for about 15 minutes or until fully cooked. Remove and let it cool, then shred the chicken into thin strips.
  2. In a large bowl, combine the julienned carrot, cucumber, and sliced red bell pepper.
  3. In a separate small bowl, mix together the lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper to create the dressing.
  4. Add the shredded chicken to the bowl of vegetables and pour the dressing over the top. Toss everything together until well combined.
  5. Garnish with chopped cilantro, mint, and crushed peanuts before serving.
