- Lime juice - 30 ml
- Fish sauce - 15 ml
- Sugar - 5 grams
- Garlic - 1 clove, minced
- Chili pepper - 1 small, sliced (optional)
- Peanuts - 30 grams, crushed
Steps
- Cook the chicken breast in boiling water for about 15 minutes or until fully cooked. Remove and let it cool, then shred the chicken into thin strips.
- In a large bowl, combine the julienned carrot, cucumber, and sliced red bell pepper.
- In a separate small bowl, mix together the lime juice, fish sauce, sugar, minced garlic, and sliced chili pepper to create the dressing.
- Add the shredded chicken to the bowl of vegetables and pour the dressing over the top. Toss everything together until well combined.
- Garnish with chopped cilantro, mint, and crushed peanuts before serving.
