Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Pork tenderloin - 150 grams, thinly sliced
  • Cabbage - 100 grams, finely shredded
  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, julienned
  • Fresh mint leaves - 10 grams, chopped
  • Fresh cilantro - 10 grams, chopped
  • Lime juice - 30 ml
  • Fish sauce - 15 ml
  • Sweetener (erythritol or stevia) - 5 grams
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, thinly sliced (optional)
  • Peanuts - 20 grams, crushed (optional for garnish)

Steps

  1. In a pot of boiling water, cook the shrimp for 2-3 minutes until pink and opaque. Remove and set aside.
  2. Add the sliced pork tenderloin to the same pot and cook for about 5-7 minutes until fully cooked. Drain and let cool before slicing into thin strips.
  3. In a large bowl, combine the shredded cabbage, julienned carrot, and cucumber.
  4. In a small bowl, whisk together lime juice, fish sauce, sweetener, minced garlic, and chili pepper to create the dressing.
  5. Add the cooked shrimp, sliced pork, chopped mint, and cilantro to the bowl of vegetables.
  6. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  7. Serve immediately, garnished with crushed peanuts if desired.
