- Red bell pepper - 50 grams, julienned
- Fresh mint leaves - 15 grams, roughly chopped
- Fresh coriander (cilantro) - 15 grams, roughly chopped
- Peanuts (unsalted) - 30 grams, crushed
- Lime juice - 30 ml
- Soy sauce - 15 ml
- Sugar (or agave syrup) - 5 grams
- Garlic - 1 clove, minced
- Chili (fresh or dried) - to taste
Steps
- Rinse the konjac noodles under cold water and drain well.
- In a large mixing bowl, combine the konjac noodles, julienned carrot, cucumber, and red bell pepper.
- In a small bowl, mix together the lime juice, soy sauce, sugar, minced garlic, and chili until the sugar dissolves.
- Pour the dressing over the vegetable mixture and toss everything gently until well-coated.
- Add the chopped mint and coriander, and toss again to combine.
- Serve the salad in bowls, topped with crushed peanuts.
