Ingredients

  • Konjac noodles (or jellyfish substitute) - 200 grams
  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, julienned
  • Red bell pepper - 50 grams, julienned
  • Fresh mint leaves - 15 grams, roughly chopped
  • Fresh coriander (cilantro) - 15 grams, roughly chopped
  • Peanuts (unsalted) - 30 grams, crushed
  • Lime juice - 30 ml
  • Soy sauce - 15 ml
  • Sugar (or agave syrup) - 5 grams
  • Garlic - 1 clove, minced
  • Chili (fresh or dried) - to taste

Steps

  1. Rinse the konjac noodles under cold water and drain well.
  2. In a large mixing bowl, combine the konjac noodles, julienned carrot, cucumber, and red bell pepper.
  3. In a small bowl, mix together the lime juice, soy sauce, sugar, minced garlic, and chili until the sugar dissolves.
  4. Pour the dressing over the vegetable mixture and toss everything gently until well-coated.
  5. Add the chopped mint and coriander, and toss again to combine.
  6. Serve the salad in bowls, topped with crushed peanuts.
