- Jellyfish (dried) - 100g
- Carrot - 1 medium, julienned
- Cucumber - 1 small, julienned
- Red bell pepper - 1 small, julienned
- Fresh cilantro - 20g, chopped
- Fresh mint - 20g, chopped
- Roasted peanuts - 30g, crushed
- Rice vinegar - 2 tablespoons
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Garlic - 1 clove, minced
- Chili pepper - 1 small, sliced (optional)
Steps
- Soak the dried jellyfish in water for about 20 minutes until rehydrated, then drain and rinse thoroughly.
- In a large bowl, combine the rehydrated jellyfish, julienned carrot, cucumber, and red bell pepper.
- In a small bowl, whisk together the rice vinegar, fish sauce, lime juice, sugar, minced garlic, and sliced chili pepper (if using).
- Pour the dressing over the salad mixture and toss well to combine.
- Add the chopped cilantro and mint, and gently mix again.
- Let the salad sit for about 5 minutes to allow the flavors to meld.
- Serve the Nộm Sứa garnished with crushed roasted peanuts on top.
