Ingredients

  • Jellyfish (dried) - 100g
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, julienned
  • Red bell pepper - 1 small, julienned
  • Fresh cilantro - 20g, chopped
  • Fresh mint - 20g, chopped
  • Roasted peanuts - 30g, crushed
  • Rice vinegar - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Garlic - 1 clove, minced
  • Chili pepper - 1 small, sliced (optional)

Steps

  1. Soak the dried jellyfish in water for about 20 minutes until rehydrated, then drain and rinse thoroughly.
  2. In a large bowl, combine the rehydrated jellyfish, julienned carrot, cucumber, and red bell pepper.
  3. In a small bowl, whisk together the rice vinegar, fish sauce, lime juice, sugar, minced garlic, and sliced chili pepper (if using).
  4. Pour the dressing over the salad mixture and toss well to combine.
  5. Add the chopped cilantro and mint, and gently mix again.
  6. Let the salad sit for about 5 minutes to allow the flavors to meld.
  7. Serve the Nộm Sứa garnished with crushed roasted peanuts on top.
