Ingredients
- Water spinach (rau muống) - 200 grams
- Carrot - 1 medium, julienned
- Red bell pepper - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Chili pepper - 1 small, thinly sliced (optional)
- Roasted peanuts - 30 grams, crushed
- Fresh cilantro - a handful, chopped
- Salt - to taste
Steps
- Wash the water spinach thoroughly and cut it into 5 cm lengths.
- Bring a pot of water to a boil and blanch the water spinach for 1-2 minutes until just wilted. Drain and rinse under cold water to stop cooking. Squeeze out excess water and set aside.
- In a large bowl, combine the lime juice, soy sauce, sugar, minced garlic, and salt. Whisk until the sugar dissolves.
- Add the blanched water spinach, julienned carrot, sliced red bell pepper, and chili pepper (if using) to the bowl with the dressing. Toss well to combine.
- Taste and adjust the seasoning with more lime juice or salt if needed.
- Transfer the salad to a serving plate and sprinkle with crushed peanuts and chopped cilantro before serving.
