Ingredients

  • Water spinach (rau muống) - 200 grams
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Chili pepper - 1 small, thinly sliced (optional)
  • Roasted peanuts - 30 grams, crushed
  • Fresh cilantro - a handful, chopped
  • Salt - to taste

Steps

  1. Wash the water spinach thoroughly and cut it into 5 cm lengths.
  2. Bring a pot of water to a boil and blanch the water spinach for 1-2 minutes until just wilted. Drain and rinse under cold water to stop cooking. Squeeze out excess water and set aside.
  3. In a large bowl, combine the lime juice, soy sauce, sugar, minced garlic, and salt. Whisk until the sugar dissolves.
  4. Add the blanched water spinach, julienned carrot, sliced red bell pepper, and chili pepper (if using) to the bowl with the dressing. Toss well to combine.
  5. Taste and adjust the seasoning with more lime juice or salt if needed.
  6. Transfer the salad to a serving plate and sprinkle with crushed peanuts and chopped cilantro before serving.
